Pineapple fried rice is a must-try in Thai food! It’s full of flavour with a mix of curry spices and sweet pineapple. Serving it in a pineapple bowl is always a crowd-pleaser. Plus, it’s super easy and quick to make at home, so you can enjoy real Thai flavors in no time!

Ingredients
- 12 pcs peeled and deveined shrimp (Or replaced by desired meat)
- 3 tsp oil
- 2 tsp soy sauce
- 2 tsp fish sauce
- 1 ½ tsp shrimp paste in oil
- 1 ¼ ts curry powder
- ½ tsp white pepper
- 1 ½ tsp sugar
- ¼ tsp table salt
- 2 eggs
- 2 bowls cooked coconut rice
- ½ cup diced onions
- 2 chopped green onions
- 1 cup pineapple cubes
- 1 diced roma tomato
- ½ cup roasted cashews, unsalted
- 2 tbsp raisins (Optional)
- Pineapple bowl for serving (Optional)
[Coconut Rice]
- 0.9 cup uncooked rice
- ½ cup water
- ½ cup coconut milk
Instructions
- Prepare the coconut rice. (Usually takes around 30mins for regular rice cookers).
- If you’re using a pineapple bowl for serving, scoop out the pineapple flesh and dry the inside of the pineapple.
- Mix the curry powder, white pepper, sugar, and salt, and stir well.
- Mix the soy sauce, fish sauce, and shrimp paste with a bit of oil in another small bowl.
- In a large frying pan, heat 2 tablespoons of oil over high heat until hot. Add the shrimp and cook for around 5 mins or until done. Turn off the heat and remove the shrimp from the pan. Set them aside.
- Crack the eggs into the pan and scramble them slightly. Once the eggs are halfway cooked, add the cooked coconut rice and onions. Toss everything together and mix well.
- Add the dry seasoning, fish sauce, and soy sauce. Toss everything together and mix well for another 2 minutes.
- Add the pineapple and raisins, along with the cooked shrimp. Let everything sit for about 10-15 seconds to let it brown slightly. Then toss everything together to mix well.
- Turn off the heat and mix in the cashews, tomatoes, and green onions.
- Serve it on a plate or in a pineapple bowl for a fun twist.
